about our beans

Organic Fair Trade Natural Processed Sidamo Ethiopia Arabica Beans From Shanta Golba Cooperative

This coffee comes from the Sidamo Region of Oromia in the Rain Forests of Southwest Ethiopia . Grown by Small Holder Family owned Farms, Shanta Golba is one of the primary  cooperatives belonging to the Sidama Coffee Farmers Cooperative Union  (SCFCU), one of Ethiopia’s largest and best-known exporting  organizations. Harvest in Sidamo occurs slightly earlier than in the more southern  zones of Gedeo and Guji, and as a result the fully washed lots from here  are usually the year’s very first top quality arrivals from anywhere in  Ethiopia.

Tasting Notes

Bright acidity, smooth body, solid coffee flavor, hints of chocolate, floral, earthy spice, complex, clean, soft lasting finish.

Natural process/Unwashed coffee

This method is easily the oldest and has been used for hundreds of years. Unwashed coffee, also known as the dry process, is the most natural way of extracting the bean. The cherry is washed before being laid out to dry in the sun for up to several weeks. The cherry is turned often to prevent spoilage and covered at night or if it’s raining.

The unwashed method is known to produce a coffee that’s complex, smooth and has a heavy body.
